Cape Malay Vegetable Bobotie

Bobotie is one of South Africa’s best-known dishes, with roots in the Cape Malay community. Traditionally made with minced meat and a spiced egg-based topping, this plant-based interpretation uses lentils and vegetables while keeping the characteristic sweet-and-savoury spice profile.

Ingredients

For the filling:

1½ cups cooked brown or green lentils

1 large onion, finely chopped

2 cloves garlic, minced

1 tablespoon vegetable oil

1 tablespoon curry powder

1 teaspoon turmeric

½ teaspoon ground cinnamon

½ teaspoon ground cumin

1 tablespoon chutney

2 tablespoons raisins

1 tablespoon lemon juice

1 cup grated carrot

½ cup vegetable stock

Salt and pepper to taste

For the topping:

1 cup unsweetened plant milk

2 tablespoons chickpea flour

½ teaspoon turmeric

Salt to taste

Method

Heat the oil in a pan and cook the onion until soft.

Add the garlic, curry powder, turmeric, cinnamon and cumin. Stir for about a minute.

Add the carrot and cook for several minutes.

Stir in the lentils, raisins, chutney, lemon juice and vegetable stock.

Simmer for 10 minutes until the mixture becomes thick.

Transfer the filling to a baking dish.

Whisk together the plant milk, chickpea flour, turmeric and salt. Pour over the filling.

Bake at 180°C (350°F) for about 25–30 minutes, until the topping is set and lightly browned.

To Serve

Traditionally, bobotie is served with yellow rice and chutney. For a fully plant-based plate, serve it with fragrant rice and additional chutney.
